Different milks, a diverse terrain, and unique cheesemaking techniques all play a role in the subtle differences in each cheese's color, texture, and flavor. We have selected four of our favorites for this sampler: - Manchego Reserva - Spain's most famous cheese, made entirely from pure La Mancha sheep's milk. Manchego is prized for its rich, complex flavor and its satisfyingly grainy texture. The reserve version is aged for one year.
- Mahon - This firm cow's milk cheese comes from the Balearic Island of Menorca in the Mediterranean. This version has been aged for three months, developing a rich tanginess and fragrant aroma.
- Idiazabal - Smooth, rich and satisfyingly sharp, Idiazabal is a smoked sheep's milk cheese that gives off a warming rustic scent. It is the quintessential cheese of the Basque country in Northern Spain.

Bold, assertive flavor
Because of Greece's less-than-fertile terrain, most of its cheeses are made from sheep's milk. Feta is, of course, the best-known Greek cheese, but fresh sheep's milk cheeses are common, as well. One of the most common of these ricotta-style cheeses is Myzithra. It has a much more interesting flavor and texture than most of the ricotta available in this country. The flavor is rather nutty, and the texture is cottony and drier than ricotta. This cheese works wonderfully in cooking, especially blended into pasta dishes. Our version of Myzithra is actually the pressed and dried version. It is similar to an Italian ricotta salata and is a popular grating cheese in Greece. The cheese is quite crumbly and salty, so a little bit can add a lot of flavor to your dishes. - Made from pasteurized sheep's milk.

On a recent trip to Spain, we happened upon a small cheese fair in Trujillo. We tasted several fine cheeses, but the discovery of the day was this family-made Manchego cheese from La Mancha.This pasteurized young sheep's milk cheese is creamy and mild. Because it is an artisan product there is no waxy texture like industrial cheeses, just a rich silkiness. The Queso Manchego D.O. seal of authenticity assure you that the cheese is 100% ewe's milk from sheep that graze on La Mancha in central Spain. Traditionally slices or wedges of this celebrated cheese are served as tapas or snacks with olives, accompanied by manzanilla, fino sherry or beer.
