Start up X11 and select About X11 from the X11 menu. It will tell you which version of XFree86 you are using.

I think MacOS uses the XFree86 version of Xvfb, but my first question is how can I tell for sure, and how do I determine which version I've got?

Xvfb on other platforms (including Cygwin, I normally work in Windows) is fine, but I've no idea how to tell version numbers.
