Ok, yeah, I have IPTables doing that.
Is there any way to get it to list what I need? Or at least list it to a
text file so I can read through it all, as it's a limited display on the SSH
terminal.

Yep - you're listing the content of the kernel
message buffer ... if you happen to have iptables
log all traffic using ksyslogd that's you get ;)
