Usually in the kernel configuration options, if there is a high level option that needs set (a module that others depend) and you set it to build as module, then the others that depend on it have not choice but to be modules.
Either way modules, especially with video for linux allows you to pass command line options easier than if they were built into the kernel.
Usually when you are inside "make menuconfig" and you have the item highlighted, you can select Help for it, and if there is text in the help section, they'll usually reference the module that it would create.. Not all the time, but I've found it to be listed about 75% of the items I've dealt with.
