De-screening

The TWAIN interface for an Epson scanner has two selections for type of
image:  Color Photo and Color Photo De-screening.  Profile Prism, a software
program for creating profiles, encouraged selection of the De-screening
option for scanning the calibration chart.  Would someone care to enlighten
me on just what is "De-screening?"  and when it should be used?  Thank you.
