To answer your question: yes.  Most folks who go this route dedicate 
a printer to doing BW.  Changing back and forth between color and 
BW isn't terribly practical.

If you're going to do quadtone BW on an Epson inkjet printer, the 1200 
isn't your best choice.  AFAIK, the Piezography system is available for 
the Epson 3000 and the 1160, both of which are 4-color printers.  
I haven't checked up at inkjetmall.com for a while, so maybe I'm all wet 
on that.  There are hextone BW inksets that you can buy for Epson 6-color 
printers, but then you're on your own with the "separations."

Of course, the 1160 isn't made any more.  Too bad -- but you may be 
able to find one used or refurbed.  The 3000s are still available new, 
AFAIK.
