Just to be clear, you are using the C80 with its regular (pigmented) ink
set, but printing only in black (black ink) to produce monochrome (black
and white)... is that correct?


Some people use the whole color inkset to make black and white prints
to extend the gradients, creating grays with all three colors (CMY).
Many people have indicated they don't like the most of the Epsons for
printing with just black ink. but prefer either using the the quad black
toned inks, or the full inkset in monochrome printing.  Some complain
they can't get grays that remain balanced throughout the density range
when using the full inkset.

I find I get good results with the older Epsons (Stylus Pro for
instance) using just black ink to produce monochromic prints.
