I have an 8700 too, but this answer applies to all hi-bit scanners. 
Photoshop can only accept 24 or 48 bit color images, so the scanner 
software has to convert the 42 bits the scanner captures either down 
to 24 bits or up to 48 bits.

For example in the ScanWizard 6 software (which is what I use with my 
8700 on my Mac) near the top of the Settings window  the Type menu 
contains options for "RGB Colors" which outputs 24 bit images and 
"RGB Colors (48-bit)" which outputs 48 bit images.
