I have tried grabbing linux-iscsi- and installing, but I
get this error when I try to modprobe iscsi_tcp:
iscsi_tcp: Unknown symbol iscsi_register_transport
iscsi_tcp: Unknown symbol iscsi_conn_error
iscsi_tcp: Unknown symbol iscsi_recv_pdu
iscsi_tcp: Unknown symbol iscsi_unregister_transport
Is it a bug or an error on my part?

What did you do for the install part? Copy iscsi_tcp and scsi_transport_iscsi to the /lib/modules/`uname -r`/kernel/drivers/scsi then run depmod -a?

I copied them to /lib/modules/`uname -r`/iscsi and then ran depmod -a.

Did you make scsi_transport_iscsi in the mainline kernel and install that too (look in lib/modules/`uname -r`/kernel/drivers/scsi to find out)? If so modprobe may be installing that version instead of the one that comes with open-iscsi.
