When you save..as either append the desired extension to the file name
eg. my_pic.jpg at the top OR at the bottom above the HELP button click
the '+' next to Select File Type (by extension) and select the desired
extension.
Most file types other than XCF (Gimp's native file type) will have a
short dialog allowing you to set some parameters. Almost always, just
accepting the defaults will give you good results.
