Anja, I've used gimp for some rudimentary image analysis for the past four or five years. However, I've started migrating to Fiji (a fork of imagej). It streamlines much of my tasks, because it is the right tool for the job. To be direct, I don't have an answer for you, but I am interested to know if it can be done within gimp. In imagej with an image open go: Analyze>Histogram>List>File>Save As... this should give you a .xls file.
