scanning strategies for larger ESC3000 art prints

<x-flowed>I would like some advice about (a) scanning larger art (watercolors,
etc.) piecemeal on a flatbed versus (b) photographing the art and
scanning the film.

I had thought I would use an Epson 836XL to scan up to about 12" x
17" art and photograph art that is larger art but still not too big
for the 3000. But two 12 x 17 scans could more than cover most of the
larger art I would print on the 3000. Wouldn't that be better?

If so, what about stitching together four such scans versus
photographing even larger art for printing reproductions on a 24"
printer? At that point I'd think medium-format photography might
become preferable.
