David's right - find a source who's savvy in ColorSync and profiling and get the scans done in RGB with tagged profile, you then convert to CMYK for prepress and cross render to the Epson for proofing. The Colorsync list is a great place to find them (Check out Tom Moran @ Pro Color) Another workflow - some drum scanners can scan into cieLAB space (D50, two-degree observer) - bring that into Photoshop 5's exact same cieLAB space (D50, two-degree observer) and do a profile to profile transform to one of the RGB working spaces or directly into your CMYK space.
