Speaking from experience - I have a client that has Trixbox (setup by a previous phone consultant) that also uses all 7960 and 7940 phones.  Trixbox works perfectly with the phones - it uses an endpoint manager that automatically discovers and configures the phones, even setting the background display.  I think it's a special add-on module that was added to this installation, I'm not entirely sure.  I can check if you would like me to pursue this?
