Why the cube root? Why not the log, which is what dB is? and which is what
many potentiometers at least approximate?

I would agree. The slider would then spend most of its time being inaudible.
The difference between -60 and -120 is not much as far as hearing is
concerned. If the max output (0 dB) is 100dBabsolute, then -60 is 40dB and
-120 is -20 .
